Top 5 Tips for the Best Creamy Mushroom Sauce

You don't need to be an experienced cook to make a delicious creamy mushroom sauce. However, a few simple tips and tricks can make a big difference in flavor and texture.

  1. Sauté the mushrooms over medium-high heat. This is one of the most important tips for making a flavorful mushroom sauce. If you cook mushrooms over low heat, they tend to release a lot of moisture and steam rather than brown. We want them to develop a beautiful golden color, which brings out their rich, savory flavor. Use a large skillet to give the mushrooms enough space to brown properly.
  2. Combine different types of mushrooms. For the richest flavor, we recommend using a combination of frozen wild mushrooms and fresh button mushrooms. Wild mushrooms add a deep, earthy aroma, while button mushrooms provide a lovely texture. If you have fresh porcini mushrooms, they're an excellent addition, too.
  3. Don't skip the thyme. Thyme and mushrooms are a fantastic combination. Fresh thyme adds a wonderful herbal aroma that complements the earthy mushroom flavor without overpowering it. If you don't have fresh thyme, you can substitute a smaller amount of dried thyme.
  4. Add the heavy cream toward the end of cooking. Pour in the heavy cream once the mushrooms are nicely browned and most of the white wine has reduced. Let the sauce simmer gently until it thickens and all the flavors come together. Avoid boiling it vigorously, as we want to maintain that beautifully smooth, silky texture.
  5. Adjust the sauce consistency depending on what you're serving it with. If you're serving this creamy mushroom sauce with bread dumplings, it can be slightly thinner, as the dumplings will soak up the delicious sauce. For pasta or gnocchi, a thicker consistency works better. If the sauce is too thick, add a splash of vegetable stock. If it's too thin, let it simmer uncovered for a few extra minutes.

Frequently asked questions and answers (FQA)

Can I make mushroom sauce using only button mushrooms? Absolutely. If you don't have frozen wild mushrooms, you can use fresh button mushrooms instead. The sauce will have a slightly milder flavor but will still be delicious. For a richer, more intense mushroom flavor, we recommend using brown button mushrooms (cremini mushrooms).

How do I thicken creamy mushroom sauce? The easiest way to thicken mushroom sauce is to let it simmer uncovered for a few extra minutes. As the sauce cooks, some of the liquid will evaporate, naturally creating a thicker, creamier consistency.

Can I make mushroom sauce without wine? Yes. You can simply leave out the white wine and replace it with a little extra vegetable stock. For a touch of freshness and acidity, add a few drops of freshly squeezed lemon juice at the end of cooking.

Do I need to thaw frozen mushrooms before cooking? No. For this recipe, you can add the frozen mushrooms directly to a hot skillet. Sauté them over medium-high heat until the excess moisture evaporates and the mushrooms begin to brown.

Can I make creamy mushroom sauce without heavy cream? Yes. You can replace the heavy cream with a plant-based cooking cream, such as oat or soy cream. The flavor and texture will be slightly different, but you'll still get a delicious, creamy mushroom sauce.

Storing

Mushroom sauce is best enjoyed freshly made, while it's still wonderfully creamy and warm.
